French Mediterranean food

Veteran Hamptons chef Arie Pavlou (Bridgehampton Inn, Coeur des Vignes) has opened a French Mediterranean eatery in the former Robert’s on Main Street. Quoted in Eater, Pavlou said, "This all happened in three days; it was mind blowing. I wish there were cameras around because it was like a reality show." (Été is "summer" in French.)

Cypriot Pavlou will serve dishes like halloumi and grilled octopus, as well as French fare such as foie gras, escargot, duck, and seafood like scallops and striped bass with truffle sauce. Pavlou plans to grow his own herbs, as well as make his own bread, ice cream, and pastries.
