If you've ever eaten a meal out East, then chances are you've experienced the culinary expertise of the Honest Man Restaurant Group. (Honest Man is responsible for mainstays like Nick & Toni's, Townline BBQ, and Rowdy Hall; like we said, you've probably eaten at one of their restaurants.) So what does Mark Smith, an Honest general manager since 1995, have to say about his company's repertoire? For starters, Smith believes Nick & Toni's successful run results from "the quality of the food, the service, the feel of the restaurant and the celebrity factor." (We got nervous the whole celebrity thing didn't make the cut.) Smith follows this thought with some dish on the group's otherwise eclectic mix of properties. Despite their differences, Smith believes each restaurant compares in its willingness to maintain "a superior level of service even though the types of service are different." That said, he's also glad the restaurants don't "cannibalize" one another.
